Chuy’s to open new Tex-Mex restaurant in Leander with $1.75 million project

Tex-Mex chain Chuy’s is planning a new ground-up restaurant in Leander, according to recent state filings.

The project, located at Ronald Reagan Boulevard and Kaufman Loop in Williamson County, will begin construction Dec. 1, 2025. Work on the 6,566-square-foot restaurant and related site improvements is scheduled to be completed by July 1, 2026. The privately funded development carries an estimated cost of $1.75 million.

Chuy’s opened its first location in Austin in 1982 inside a converted barbecue joint on Barton Springs Road. Since then, the company has expanded across Texas and beyond, with each restaurant maintaining eclectic design features such as hand-carved wooden fish and hubcaps while incorporating unique elements for each community.

The restaurant chain emphasizes made-from-scratch dishes rooted in Tex-Mex traditions with flavors influenced by New Mexico, the Rio Grande Valley and South Texas. Chuy’s also highlights community involvement, partnering with local organizations and supporting neighborhood events.
