Rose & Dagger Coffee Company to open brick-and-mortar shop in Georgetown

Rose & Dagger Coffee Company, a Georgetown coffee business that has built its following from a mobile trailer, is preparing to open its new brick-and-mortar location later this month.

The company will hold a grand opening Saturday, Aug. 29, from 10 a.m. to 5 p.m. at 1005 S. Rock St. in Georgetown, according to an announcement from the business.

Rose & Dagger has operated its coffee trailer at the South Rock Street property while also offering mobile service for events. The business describes itself with the slogan “Bold lines. Bold coffee.”

The move into a permanent space marks an expansion for the locally grown coffee company and gives customers an indoor destination beyond its trailer operation.

Rose & Dagger has already become part of a cluster of small businesses and food vendors around the property. The grand-opening event will include several other local businesses, according to promotional materials, including Sanford Sourdough Bakery, Hombre Tacos and Churros ATX.

The location has also served as a gathering place for pop-ups. The Salty New Yorker, a Georgetown bagel business, has held Saturday pop-ups at Rose & Dagger, including events where large batches of bagels sold out within minutes.

Rose & Dagger celebrated its first anniversary at the South Rock Street location in September 2025 with an event featuring local food, retail and service vendors.

The Aug. 29 grand opening will run from 10 a.m. to 5 p.m. at 1005 S. Rock St., Georgetown, TX 78626.

The company said customers can visit the new space, grab coffee and shop during the celebration.
