Conejos Tex-Mex Cantina is preparing to open its third Central Texas location, bringing its menu of tacos, enchiladas, fajitas and margaritas to Cedar Park.
The restaurant is planned for Suite 190 at 2875 W. Whitestone Blvd., near New Hope Drive.
A state filing registered Aug. 17 lists an estimated construction cost of $240,000. The project calls for demolishing the existing interior down to the shell and remodeling approximately 3,500 square feet. Construction is scheduled to be completed Oct. 1, although construction dates are estimates and do not necessarily represent the restaurant’s opening date.
Co-owner Bobby Hernandez previously said the Cedar Park restaurant was expected to open in October or November. The company now lists the location as “coming soon” on its official website.
Conejos opened its original restaurant at 2082 N. U.S. Highway 183 in Leander. Its second location, at 3200 Greenlawn Blvd. in Round Rock, held a soft opening Aug. 5.
The restaurant describes its food as a combination of Mexican traditions, Tex-Mex flavors and Southern influences. Its menu includes crispy short rib quesa-birrias, brisket enchiladas, mango fish tacos, carnitas street tacos, fajitas and grilled red drum.
Appetizers include brisket bites, mini crunchy tacos, chorizo fritters, street corn and hand-smashed guacamole. The drink menu features frozen and on-the-rocks margaritas, tequila cocktails and mezcal drinks.
Conejos also offers weekday happy hour from 3 to 6 p.m., with half-price appetizers for dine-in customers.
